Thanks to the creator of this wonderful recipe... It made my day, my husband loved the taste and craved for more. I am sure all of you who have kids , you will turn into a super mom with this dish and all the men feeling it so hard to cook, this will be your short way out... You cam make this dish with Egg plant as well.
Ingredients:
Bhendi/Okra/Lady's Finger (Simply Bendakaya in Telugu ) - 250 gms
Chilli Powder - 1 tbsp
Dry Mango Powder(Amchur) - 1 tsp
Fennel Powder(Saunf Powder) - 1 tbsp
Salt
Oil
Procedure:
1. Wash and pat dry the Bhendi leaving now water on them
2. With a Knife slice them diagonally (salad style) into thin slices.In case you are using Egg plant cut into thin discs for easy frying.
3. Heat oil in a deep frying pan, and allow oil to heat uniformly
4. Drop the Bhendi and fry until they float , which is a sign of crispiness, don't leave until they change to brown color as this makes them taste bitter.
5. Take out once fried onto a paper towel, and add salt
6. Add the chilli powder , dry mango powder and Fennel powder and Toss
7. Serve with Hot Rice or as a Side dish to your meal
Try this when you have a large group of friends or Family coming over and you need to surprise them with some sort of a snacky crispy vegetable. Easy to fry along with those papads or fingers just before the dinner.
To make it more simple try making the same with the frozen Bhendi or Okra from the frozen vegetable section of your grocery stores.
